Meet Chef Justin
Chef Justin blends classical training, cultural heritage, and hometown pride into food that’s both personal and approachable. As a trained chef with more than two decades of experience, he has worked in high-end restaurants, catering companies, and as a private chef—roles that have allowed him to hone his craft while running kitchens for others.
Fat Kitty Teriyaki is the realization of a long-held dream.
Born and raised in Philomath, his passion for cooking began at a young age, inspired by time spent with his grandmother, who grew, processed, and prepared most of her food. Her Japanese roots and Asian-inspired cooking left a lasting impression, shaping the flavors and techniques that influence many of Chef Justin’s recipes today.

We believe in keeping things simple. That’s why the Fat Kitty menu has limited options: we focus on quality and flavor, and we don’t want to confuse that with a busy menu. We do teriyaki, and we do it well.

We now have gluten-free teriyaki sauce! It is used on any dish we serve with tofu. We do not use it unless requested on any other item.

Our gluten-free, vegan teriyaki sauce is used on our tofu dishes. Our tofu dishes are the only menu items that are vegan, as all other items are made with teriyaki sauce that contains fish.
